In the high-elevation region of La Paz, Honduras, famed for its coffee production, Mario Mejia grows coffee using a natural process at elevations of 1100-1700 masl, incorporating varietals such as Bourbon, Catuai, Caturra, IHCAFE 90, and Lempira. Hand picked, subjected to a 30-hour dry fermentation, and sun-dried for 12 to 15 days, contributing to the rise of microlots from the country's small-holder farmers. The cool climate in this region allows coffee to ripen slowly, enhancing sugar development. And biodiverse farming amongst citrus and advocado helps maintain soil diversity.
