The decaffeination process for this coffee involves washing the varieties Castillo, Caturra, and Colombia grown at elevations of 1400-2000masl. Ethyl acetate, a naturally occurring ester (from sugar cane), is used as a solvent to effectively bond with and remove caffeine from the coffee beans. After the caffeine removal, the beans are carefully dried and polished, with the ethyl acetate traces safely removed through steaming.
