Oscar and Francisca Chacón are third-generation coffee producers. This lot was grown on their farm, Las Lajas, in Costa Rica’s Sabanilla District in the Alajuela Canton. For years, Oscar and Francisca sold whole coffee cherries as part of a co-operative for the going market price.
In 2005, they decided to invest in their own de-pulper so that they could have more control over their lots, and receive a better price. After much experimentation, Oscar and Francisca discovered that they could create unique and exciting flavour profiles by modulating the drying time of the coffee.

𝗣𝗿𝗼𝗰𝗲𝘀𝘀𝗶𝗻𝗴: Described by the producers as YELLOW DIAMOND; fruit is partially removed from the seed, then is DRIED very slowly within strict temperature parameters.
